I have never had a cookie recipe so easy going in my life. I mean cookies in general are easy and I enjoy them. But have you ever stumbled upon a cookie recipe so inexplicably easy that anyone could bake them and not mess them up? Whew... it makes life so easy!
Anywho - on my CTMH board we share a lot of recipes and stuffs, and I gotta tell you when one girl shared this recipe, I was like no way. That just won't work. I don't know about that. Then another girl posted her initial doubt, and how she figured what the hay, I'll try em. And she did and boasted a fabulous result! Soooo I figured why not? The ingredients are easy peasy and everyone has them in their cupboard. No way they don't! :)
1 Cup Peanut Butter
1 Cup Sugar
2 eggs
Mix all together really well. Use a mixer - it makes life so much easier. The dough should now resemble cookie dough - being all gooey and stuff.
Drop by teasponfuls (or finger fulls like me) onto a cookie sheet about 1 1/2" or so apart and bake at 350* for 10-12 minutes. Mine needed about 13 minutes because they weren't browning well.
Anywho - let cool on the cookie sheet about 1 minute, and then move. I actually baked mine like peanut blossoms w/a big hershey's kiss in the center of each of them. The batter made about 2 1/2 dozen, and took all of 20 minutes to make my little brother something to take to school for his class party tomorrow. Neat huh?
