It's a bit of a process... but definitely DELISH. It was a great welcome into spring...I got it from Betty Crocker, but a quick search on their website says it's not a 'freebie' recipe - I got it from one of those supermarket aisle cook books they sell for like $3.99 or something last spring. It's called cake-mix recipes and it's by FAR the best one I've ever picked up. EVER. I use it all the time and have made at least 6 of the recipes in it.
1Cup very hot water (I used boiling)
1 box (4 serving size) Raspberry flavored gelatin
1 box White cake mix
1/2 cup frozen (Thawed) lemonade concentrate (I used pink lemonade)
1/4 cup water
1/3 cup vegetable oil
4 egg whites
1 container (12oz) vanilla frosting
1 cup thawed whipped topping
1 1/2 cups fresh raspberries
1.) Heat ove to 350* - spray bottom fo 13x9" pan with baking spray or liberally use butter to grease bottom. (Don't grease sides because the less grease you use on the sides, the higher your cake will rise)
2.) In small bowl, mix hot water and gelatin until completely disolved, cool slightly.
3.) in large bowl, beat cake mix, 1/4 cup of the gelatin mixture, 1/2 cup of the lemonade concentrate, water, oil and egg whites with mixer on low for 30 seconds, and medium for 2 minutes. Pour into pan. Reserve remaining gelatin and lemonade concentrate for later use.
4.) Bake 30-35 minutes or until toothpick comes clean. Poke warm cake every inch with fork tines. remove 1 TBSPN of the reserved gelatin mixutre to small microwaveable bowl. In another small bowl, mix remaining gelatin mixture and lemonade concentrate - pour slowly over cake. Cool completely - at least 1 hr.
5.) in medium bowl, fold together frosting and whipped cream. Frost cake. Microwave reserved gelatin mixture to liquefy (10 seconds) and use a spoon to place small drops all over frosting. with toothpick, swirl gelatin into frosting.
Garnish with raspberries and serve. Store in refridgerator.
