Buffalo Chicken Lasagna Rollups :)
so the mixture was
4 oz Ricotta Cheese
1/4 cup Franks Hot sauce
2 cups shredded cheddar cheese
4oz Maries Blue Cheese Dressing
And then some random Fiesta dip/dressing
I had left over in the fridge
3 grilled chicken breasts cut into cubes
8 Lasagna noodles, slightly under cooked
2 stalks celery, chopped
1/2 green bell pepper, chopped
I cooked the lasagna noodles until they were almost done, but still kind of stiff, or chewy. Maybe 8 or 9 minutes in boiling, salted water. While that's cooking, combine ALL of the above ingredients together. I didn't use any salt or pepper in the chicken mixture, just salt in the water for the noodles.
Rinse the noodles with cold water. This stops the cooking process, and keeps them from sticking together because it rinses off the starch.
Lay each noodle out straight, and spread some of the mixture onto the noodle. I left a 2" lead at the top of the noodle to start the rolling and sort of folded it over the mixture, and then started rolling. This helped to keep all the mixture in the noodle.
Once it's rolled up, I placed it in an ungreased pyrex. After I had 8 of them which fit comfy in the pan, I covered with additional cheddar cheese, and baked in a hot, 350 degree oven for about 35 minutes.
Yes, this came out amazing. I highly recommend - you can adjust as much or as little franks as you'd like... but YUMMY! :)
