Coconut Pineapple Cake; Jasey's Crazy Daisy
I think the beauty of Pinterest is the ability to stumble upon things you normally wouldn't find, simply because you wouldn't ever have looked in a place you didn't know existed. Tonight, I'm making this fabulous cake for dinner guests I'm having over. It's cooling in the fridge, and I'll do the frosting later this evening, but man the whole house smells fantastic.

If you're looking for that last end of summer fabulousness (or, for my gal pal's from down under, a new take on Spring Entertaining ) to share with friends - I recommend this yummy, yummy cake from Jasey :)

Jasey's Crazy Daisy: Coconut Pineapple Cake:
One of my grandfather's favorites, it's a tender coconut cake, dotted with just the right amount of coconut and pineapple, soaked with a slightly sweet creamy pineapple coconut glaze for moistness, and frosted with real sweetened whipped cream. Not only do I love it's flavors, I love how versatile it is. As a layer cake, it is impressive, however, for less formal occasions, I simply bake it in a 9x13 cake pan, and call it good. Still pretty and oh-so-yummy, but without all the fuss.

weekend madness
This has been quite the week/weekend, but I'm beginning to really understand that I do, in fact, do too much. For a long time that just seemed like the pace that life should be led. And I convinced myself that I was truly living life, and now it's become habit, and it's hard to say no. Slow down. Enjoy the small moments. It's hard for me! I only have one life to live, and time is spent, whether i'm productive or not, I can't get those minutes back. There'll be plenty of time for rest in heaven right?

This n that
You guys will forgive me if I don't blog on the weekends right? Especially if it's because I'm just too stinkin busy living life? Yeah, I knew you were all cool like that. All four of you that read this anyway :)
Even though my boy was away for the weekend I had a lot going on. Saturday and Sunday I spent the majority of the days working on my special project, which I hinted at a few weeks ago, but haven't posted yet. Don't worry it's almost ready. Hopefully by this weekend. It's going a bit longer than I'd hoped for but, then, most projects do with me!
I figured I'd give you a little teaser anyway :) See the picture? Well the back is part of my kitchen table. I've completely redone it and LOVE the new color. But, this is all you get, you'll just have to wait until it's complete for the "rest of the story" - as they always say. (who is "they" anyway?)

Ok now we are in trouble! Who knew there was a 'Blogger' ap? That I can blog from my phone? I'd bet a ton of my craft friends knew this already! Haha since I got my new phone I almost never access the web from my laptop anymore - except for paying bills and such but now... To be able to randomly post pics and all sorts of goodies? Now we are definitely in trouble! :)

I made the leap
I did it, I finally went ahead and bought Siri and I love her. I never thought I would own a phone that could do all the amazing things that she can do, and I'm really enjoying learning everything that she can do. Here's a cool video that kind of explains everything she can do.

Quality time with the nephews :)
had a great day today spending time with my nephews :) We grabbed some lunch at Mighty Taco, and then went to the movies and by popular vote (as in 3 against 1) we saw the newest Chipmunk's movie. It was actually pretty cute. I would own it. I was more xcited for the previews though and the new Madagascar movie coming out! Sooo exciting!!!!

Have I ever mentioned how much I love this song? So much fun! I imagine I will dance to this at my wedding some day :) The video is kinda fun. Never watched "Dr. Who".... so the aliens thru me for a loop, but the video is well done for the song!

sing off...
just sittin here... hangin out with my kiddo, watchin "Sing off" which is sooo much fun this season! I especially loved the all girl group whcih was formed from girls from different groups from different seasons. WOW now that is something to contend with :)
In the mean time... I had my first date in about 10 years last night. Another Wow. Waiting on God's timing sure can pay off. What a gentleman he was! My friend and I drove to a church we love to visit in Fredonia, and he drove (2) hrs to meet us there. Poor guy got a ticket for a dead tail light on his way out there, which delayed him another 25 minutes....but we did get to spend about 30 minutes or so in the service, and then we went to Timmy Ho's for tea, hot cocoa, and conversation.
Can I admit here, I was way more nervous than I thought I would be? All I could do is pray I didn't sound like an idiot. I have no idea what we talked about, and I can't remember anything I said. I was given 11 yellow roses. He said it was supposed to be 12...but we got gyped. That's ok. Do you have any idea how long it's been since I've gotten roses? I think we're off to a good start! LOL
We might even see each other this weekend again. Exciting!

And it's scarf season! So pre-orders are appreciated, but if you would like any for Christmas presents lemme know! :)

Apple Picking!

Yum. Yum. Yumm and YUMMMOOOO
oh my gosh. take a look at this.

Ok are you wondering yet what it is? Well... I will not keep you in suspense and I will tell you! Tonight Tyler and I ran some errands - we ran over the clothes I bought for Zoey to my sister, and we ran over to Lisa & Sam's to deliver the KB tickets & parking ticket for Sunday. Well by the time we were leaving Lisa's house (8:30) it's easy to say we were both STARVING. So we hit up our entertainment book and found some coupons for a pizzeria we'd never tried before. Tony's Pizza.
We went up and had a really hard time deciding to order, so we went with a custom specialty pizza. If you don't know, Ty and I have a hard time ever agreeing on food. He's very plain, and I like to change it up a bit so just getting a regular pizza is never an option. However, tonight we were in luck because they had TONS of options to choose from. We finally settled on a half and half - custom! Tyler got a Chicken wing pizza, and I had Quatro Fromaggio - all on the same pizza! LOL
Hands down, this pizza was the best we'd ever had. These guys KNOW what they are doing with a pizza.. it was soooo good. Mine was a garlic butter sauce base, topped with Mozzerella, cheddar, spoonfuls of seasoned ricotta and then topped with grated romano. And I know... I know a lot of people cannot handle the texture of ricotta - but I LOVE it and this pizza.... sooooo goood. Man I can't say enough about it :) Tyler absolutely loved his also - which was also a Garlic butter sauce base, topped with Mozzerella and cheddar and then massive amounts of chicken finger chunks which had been dipped in wing sauce first. I did steal a bit of his chicken and it was yummy too!
*sigh*... I am NOT sharing my pizza with Kevin (at the office) nope - not this time - sorry!
