Winner winner cheeseburger dinner!

Well "I" decided to try something new for dinner tonight - and I gotta admit it was pretty good. The kids got a kick out of "Cheeseburger muffins", complete with ketchup, but I'm guessing they liked it, since no one had left overs and Nut ate (4) of them! A serving size is (2) and they are around 310 calories for 2pcs, so it's a good dinner with a salad, which is what we did.

(1) Lb Ground beef and (1) large onion browned together in pan, add 1 generous tablespoon Worcestershire sauce, and 1 tspn Garlic salt. After it is browned, remove from heat and let cool while you make the batter.

The batter is super easy. 1/2 cup biscuit (bisquick) mix, 1/2 cup milk, and 2 eggs. Wisk together. I added another 1/3 cup biscuit mix because I thought it was pretty runny, but it turns out it should be runny. Thats ok, my pies came out good anyway. I don't regret adding the extra mix.

Spoon a scant tablespoon of biscuit mix into each round of a greased muffin tin. (Did I mention to preheat your oven to 375?)  It should really only cover the bottom of the round.


Next, mix (2) cups shredded cheddar cheese into the cooled hamburger mixture, and top about 1/4 cup meat into the muffin rounds. Here, I added some drizzled ketchup to add to the 'cheeseburger' flavor.

Then, spoon the remaining biscuit batter over the muffin cups. Its ok that you can see the meat through the batter, but try to gently spread it around so that it's completely covered. 


Bake at 375 for about 30 minutes or until tops are golden brown, and a toothpick inserted in the center comes clean. 


  We served (2) with a side salad, everyone except Nut was full after just one serving. But then, Nut can really pack it in when he's hungry! :)
